Ingredients (large-bt)
☘ 250 gms – dried lentils (moong dal) washed, soaked for 30 minutes and drained
☘ 250 gms – spinach, shredded
☘ 750 ml – water
☘ 1 tsp – garlic, finely chopped
☘ 2 nos. – onions, finely chopped
☘ 2 tbsp – oil
☘ 2 tbsp – lemon juice
☘ To taste salt
Method (large-bt)
1) In a deep microwave glass bowl, combine the garlic, onion and oil and microwave on medium power for 1 minute.
2) Mix in the soaked dal and water and microwave high power for 15 minutes, pausing and stirring after every 3 minutes. Take care that there is no spillage of water which rises to the top.
3) Add the spinach, mix well and microwave for 5 minutes.
4) Mix in the lemon juice and salt and microwave for 30 seconds.
5) Leave to stand for 5 minutes before serving.
