How to Make Chicken Biryani Recipe in Microwave oven

Preparation Time: 45 mins 

Serves: 4


Ingredients (large-bt)


For Rice (large-bt)


400 gms – basmati rice, washed, soaked fo 30 minutes and drained 

650 ml – water 

2 ½ tsp – salt 

2” stick – cinnamon 

2 nos. – bay leaves 

4 nos. – cloves 

8 – 10 nos. – pepper corn 

4 nos. – black cardamoms 

2 tsp – oil


For the Curry (large-bt)


800 gms – chicken, cleaned and cut into 10 pieces 

3 tbsp – oil or ghee 

½ tsp – cumin seeds 

200 gms – onions, ground to paste 

2 tbsp – garlic paste 

1 tbsp – ginger paste 

1 ½ tsp – chilli powder 

1 ½ tsp – garam masala powder 

1 ½ tsp – coriander powder 

¼ tsp – turmeric powder 

70 ml – tomato puree 

½ tsp – green cardamom powder 

½ tsp – mace powder 

½ tsp – kewra essence (optional) 

4 tbsp – yogurt, beaten 

To taste salt 

150 ml – water


For Assembling (large-bt)


4 tbsp – butter or ghee 

2 tbsp – coriander leaves, finely chopped 

1” Pinch – saffron dissolved in 50 mi of warm milk


Method (large-bt)


For Rice (large-bt)


1) In a 2 litre glass bowl, combine oil and spices for the rice. Microwave on high power for 1 minute. Mix in the rice, salt and microwave partially covered on high power for 8 minutes, stirring gently after every 3 minutes.


2) Leave aside covered for 10 minutes.


For the Curry (large-bt)


1) In a glass bowl, add the oil or ghee and microwave on medium power for 15 seconds. Add the cumin seeds and microwave for 10 seconds.


2) Mix in the onions, ground to paste, garlic paste, ginger paste and microwave on high power for 3 minutes.


3) Mix in the spices and tomato puree and microwave for another 2 minutes.


4) Add the chicken pieces, water, green cardamom powder, mace powder, kewra essence and beaten curd.


5) Microwave partially covered on high power for 12 minutes, pausing and stirring after every 3 minutes.


For Assembling (large-bt)


1) Divide the rice into 3 equal portions and divide curry in half. Spread one layer of rice evenly at the bottom of a greased dish. Dot the rice with butter, some spice mix and some saffron milk. Cover this layer with curry and spread a second layer of rice over it.


2) Cover with curry and rice again and sprinkle over with remaining butter, spice mix and saffron milk. Cover and microwave on high power for 5 minutes.


3) Leave to stand for 5 minutes before serving.
