Preparation Time: 15 mins 

Serves: 4

Ingredients (large-bt)

4 nos. – medium sized capsicum, stalk removed, deseeded and halved lengthwise 

1 tbsp – lemon juice 

½ tsp – ginger – garlic paste 

1 tbsp – oil 

½ tsp – mustard seeds 

½ tsp – cumin seeds 

A pinch asafoetida 

1 nos. – onion, finely chopped 

1 tsp – ginger – garlic paste 

125 gms – paneer, mashed 

125 gms – corn kernels, boiled 

¼ tsp – turmeric powder 

½ tsp – red chilli powder 

½ tsp – cumin powder 

½ tsp – coriander powder 

100 gms – cheddar or mozzarella cheese, grated 

2 tbsp – coriander leaves, finely chopped 

To taste salt

Method (large-bt)

1) Mix the lemon juice and salt with ½ tsp ginger – garlic paste and apply on the inner side of the cut capsicums.

2) In a glass bowl, add the oil and mix in the mustard seeds, cumin seeds and asafoetida and microwave on medium power for 5 seconds.

3) When mustard and cumin splutters, mix in the onion and 1 tsp ginger – garlic paste and microwave for 2 minutes.

4) Mix in the paneer, corn, turmeric powder, red chilli powder, cumin powder and coriander powder and microwave for 3 minutes.

5) Mix in the cheese, coriander leaves and salt and stuff the mixture into the prepared capsicums.

6) Brush the outside of the capsicums very lightly with oil and arrange on a glass plate.

7) Heat the oven on convection mode for 5 minutes.

8) Microwave + convection mode on high power for 2 minutes.

9) Let it stand for 2 minutes before serving.
