Serves: 4

Ingredients (large-bt)

500 gms – prawns (cleaned and deveined) 

150 ml – coconut milk 

500 ml – stock 

6 nos. – green chillies 

1 tbsp – lemon juice 

1 tbsp – ginger paste 

1 tbsp – garlic paste 

½ tsp – cumin seeds 

½ tsp – poppy seeds 

½ tsp – mustard seeds 

½ tsp – sesame seeds 

½ tsp – fenugreek (methi) seeds 

1 bunch fresh coriander 

½ tsp – turmeric powder 

2 nos. – onions, finely chopped 

1” piece – cinnamon 

3 – 4 nos. – cloves 

To taste salt 

¼ tsp pepper 

1 tbsp – oil

Method (large-bt)

1) Combine the cumin seeds, poppy seeds, mustard seeds, sesame seeds, fenugreek (methi) seeds, cinnamon and cloves on a glass plate and microwave on medium power for 15 seconds.

2) Mix the spices with green chillies, ginger paste, garlic paste, fresh coriander, turmeric powder and onion and grind together to a thick paste.

3) In a glass bowl, add oil and heat in the microwave for 10 seconds.

4) Remove bowl from microwave, add the ground paste, mix well and microwave on medium power for 3 minutes, stirring after every one minute.

5) Stir in coconut milk, stock, prawns, lemon juice and cook for 8 minutes.

6) Add salt, mix well and cook for further 30 seconds.

7) Serve hot.
