Ingredients (large-bt)
☘ 4 nos. – rawas steaks, cleaned thoroughly
☘ 50 gms – fresh chives or spring onion, finely chopped
☘ 1 tsp – sea salt
☘ ½ nos. – lemon
☘ ½ tsp – pepper, crushed
For Salad (large-bt)
☘ 75 gms – red onion, finely sliced
☘ 50 gms – plain yogurt
☘ 1 tbsp – lemon juice
☘ 1 tsp – caster sugar
☘ ½ tsp – fresh dill or parsley
☘ To taste salt
☘ 750 gms – cucumber, thinly sliced
Method (large-bt)
1) Place salmon in microwaveable dish and sprinkle over with chives, sea salt and pepper.
2) Cut lemon into pepper, thinly slices and arrange over salmon. Cover and microwave on high power for 3 to 5 minutes until fish flakes easily when tested.
3) Serve with cucumber salad. For the salad, soak onion in ice cold water for 15 minutes, drain and pat dry.
4) In bowl, whisk together yogurt, lemon juice, sugar, dill and salt and leave aside for 5 minutes to allow the flavours to blend.
5) Mix in the sliced cucumber and onion.
